Weighing the Tannins
Measure the required amount based on the recommended dosage.
Example :
- Must or pre-fermentation: 5 to 30 g/hL.

Preparation of the Solution
- Dissolve the tannins in 10 to 20 times their weight in water or wine.
Recommended: Use warm to hot water (50-70°C) for faster dissolution.
- Mix vigorously to thoroughly disperse the tannins.
Rest and Homogenization
- Let the solution rest for 15 to 30 minutes at room temperature for complete hydration.
- Stir again before use to ensure homogeneity.
Incorporation into Wine or Must
- Pour the solution slowly and evenly into the wine or must while it is in motion (pumping over or active stirring).
- Ensure proper homogenization to avoid any local overconcentration.
Immediate Use
Use the solution within 3 hours to avoid any risk of contamination.
